Grocery Budgets

The topic of grocery budgets is a hot one for just about everyone! Everyone wants to save money, and cut the budget in any way possible. It's just not easy to do these days. The price of just about everything has gone up ... a lot! Many of you who know our family, may know that both Rich and I are savers. We don't like to spend money. We look for ways to save in every area of life. We have found, however, that saving in the area of groceries is just not the easiest thing to do. We use many specialty items that are just not available at a typical grocery store.
I get emails and messages often from people who ask me the question:
"How are you able to afford to buy healthy food?"
I am devoting this blog post to answering that question.
First, we use Amazon for items such as organic coffee beans, organic popcorn kernels, unsweetened coconut, baking ingredients (for our homemade bread), organic cereal, organic peanut butter, and a few other misc. items.
We use a local grain co-op or The Grain Mill, Wake Forest to purchase our grain for fresh home milling.  I prefer to support local businesses as much as possible and highly recommend The Grain Mill.  They have excellent customer service and many healthy specialty items.
We are members of the local buying club BJ's located in North Raleigh. From them, we purchase organic butter, eggs (sometimes, we also get eggs from a local farmer), organic ketchup, Rumsford Baking Powder, King Arthur white flour, Organic Sugar, and whole wheat pasta, cheeses, organic vegetables, honey, agave nectar, and a few other misc. items.
We use Vitacost for organic teas, vitamins, herbal supplements, immune boosting supplements, essential oils, probiotics, shampoos, and toothpaste, as well as a few other misc. items.
We also buy many food items from Trader Joes. Trader Joes is not close to us at all, so we have to plan our trips to Trader Joes around other trips that we need to make to Raleigh.  From Trader Joes, we buy produce, tortillas (for the occasions that I don't make them homemade), organic meats, organic sour cream, organic plain yogurt, cereals, granola bars, children's vitamin C, nuts, grape seed oil, olive oil, whole wheat pasta, lunch meats, cheeses, eggs, organic butter, frozen vegetables, frozen fruit, and on occasion a special ice cream snack for the children. Trader Joes is reasonably priced, uses high quality ingredients, and does not use any food items that have been genetically modified. If Trader Joes was closer to home, we would do most of our shopping at that store.
We also use local grocery stores for several items.
We buy our organic milk from a local dairy.
Our main meat source is deer.

As you can see, in order for us to eat the way we do, we can't just go to one grocery store. We gather our items from several different places. So, how do we afford to eat healthy?
First, we hold to the philosophy that we can't afford not to. Our health depends on excellent nutrition.
Second, we never eat out at restaurants. Eating out even once a week with a family of 6, significantly increases the food budget. On the occasion that we do go out, it's almost always because we are using a gift card. There may be some healthy choices at some restaurants, but let's be honest:  when we go out, we eat overpriced junk food. Last, (with a few minor exceptions) we avoid highly processed convenience foods. (you would be surprised at how much these foods increase the grocery budget)

Many people have also asked me about coupons. I rarely use coupons. If I can find a coupon for a food item that is on my list of items to buy, I wouldn't hesitate to use it. I have found that it is rare to find a coupon for items that we buy.  On average, for our family of 6 (keeping in mind that we eat every meal at home), we spend between $115-$150 per week on our grocery budget.  We tend to stock up on certain food items, so there are weeks that we spend much less than budget and weeks that we may spend more.  We also use cloth napkins and regular kitchen towels instead of paper napkins and paper towels. It may seem small, but over time, the cost of those items add up. (especially with 4 young and messy children!)

I hope that this post will help dispel the myth that healthy food is just too expensive. It most definitely can be difficult to reach for the $4 per pound organic butter ... when you can get the regular for only $2.50 per pound ... however, when you make cuts in other areas, the healthier options can become attainable.

If you haven't watched the documentary film, Food, Inc., I highly recommend it. If you have netflix for streaming you can watch it right here.

This is why ...

I thought that in honor of Mother's Day it was worth revisiting this post. Since I became a mother, each year on Mother's Day, I have the urge to go out and buy each of my children a gift because it is such an honor to be their mother. Being a mom is the best thing I've ever done ... and I am so blessed to have these 4 children in my life! Happy Mother's Day to all - to everyone who is a mom and has a mom! :)
This is why ...

This is why my home is also a classroom.

This is why my heart is more full of joy than I could have ever imagined.

This is why my life will never be the same.

This is why I am more exhausted than I ever thought possible.

This is why my reality is greater than my dreams could have ever been.

This is why my ministry is far different than I expected it to be.

This is why my respect and love for my husband has grown even deeper.

This is why.

Help me, Lord, to remember "why" on the difficult days too!

Working on the Dining Room

We almost have the living room done. We are still looking for wall decor ... just haven't found the right thing yet. So, we moved on to the dining room. We bought all new furniture, put up curtains, and decorated a little. We have browns and blues in our living room, so we wanted to continue with the browns and blues in our dining room since it's all one great room. We are also still looking for a wall hanging to go on the wall above the buffet. We just haven't found it yet.

Once we finally finish the living room ... it will be on to my bedroom. I am also working on Rosalie's room as well.
The boys' room feels like a lost cause to me. I have no idea what to do with it. So, for now, I have no plans.

Love our back deck!!!

I love our back deck. I love that the children love our back deck ... and that it's another place they can play that is perfectly safe! Rosalie can even go out there because I have blocked the stairs with a baby gate, so she can't leave the deck! Rosalie LOVES to play out there! I also love it because I send the children out there often with snack ... and that makes for an easy clean up!

Living Room - somewhat Before and After

This is only a before and after furniture shot. We don't have anything up on the walls yet and we don't have curtains yet. We are also planning to add another accent chair and a couple of end tables at some point.

Kitchen - Before and After

Kitchen view with no appliances

This is a view with the refrigerator - and right next to it - is my bread making station. I decided not to keep my grain mill out at this house. It is housed in the cabinets underneath the counter.

Here is a view with my range and dishwasher installed. We were able to have a gas line installed, so that we could have a gas range instead of electric. I am thrilled about the gas range!!

I am really enjoying the island. It has room for 2 or 3 stools on one side of the island. We haven't gotten the stools yet, but do plan on it. I'll post a picture of that once we have the stools.

SOLD

We were super excited to see the sold sign in front of the house!

Monday, August 30, 2010

We are officially ...

under contract for this house:

We are so excited! We have been looking at houses since June, and have experienced some roadblocks along the way ... but are thankful that it led us to this house! We didn't intend or expect to buy a new construction home, but are very excited to be the first ones to live in this house.

This is the dining room with a back door that leads to a large partially covered deck.

This is the Living Room.

I am very excited to say that we are going to have a gas line run to the kitchen so that we can have a gas range. Now that I've had a gas range for the past year and a half - I can't imagine having anything else!

This is a view of the kitchen from the stairs.

This is the master bedroom - which has a door that also leads to the back deck!

The house also has 4 large rooms upstairs. Rosalie will have her own room. The boys will share the large bonus room. Rich will use one of the rooms for an office, and the extra room will be used as our school room.

When we moved here 7 1/2 years ago, we thought that we were just passing through and that we would soon move on to another area. I guess we were wrong. Perhaps buying a house means that we are putting down roots.

I am so thankful to have a husband who works so hard to provide for us. He and I never dreamed that we would be a position to buy a house so soon after he completed his PhD. I am thankful that he is a saver and not a spender. I am thankful that he always has the best interest of our family as his #1 priority.

All glory to God for His abundant blessings!

Healthy Alternatives - Sloppy Joes

I have a vague memory of sloppy joes. It seems like I may have had it once or twice as a child - but my memory, vague though it is, was not at all favorable.
However, I stumble upon an online conversation about sloppy joes, and started thinking that I could totally make that into a yummy whole foods meal. I had a feeling that sloppy joes could be a very kid friendly meal. So, I took on the challenge ... and this is what I came up with. I have only made it once, however, so tweaking will come. On this particular night, I made homemade spelt/hard white buns, *organic corn, and **grass-fed beef with onions and the "special sauce".
The sauce:
1 Cup of ***organic ketchup (we happen to think Heinz is the best there is)
1 1/2 heaping teaspoons of prepared mustard
1 Tablespoon of raw apple cider vinegar
1/4-1/2 teaspoon of powdered garlic
1 heaping Tablespoon of BBQ sauce (the kind with NO HFCS)
I threw in a little bit of filtered water to thin out the sauce a bit.
I sauteed 2 lbs of grass fed beef with minced onion (1/2 of a small onion chopped finely)
I mixed up the sauce seperately and added it to the sauce when the meat was done browning.
What an incredibly easy whole foods meal!
Also, I chose to make sloppy joes on a day that was already a planned breadmaking day. So, it didn't require anything more of me than usual. Because freshly baked buns are so incredibly awesome . . . I would only make this meal on a day that I am already making bread. I always make two loaves at a time. So, I divide the dough in half, and knead it into a loaf. The other half I use to make about 14-16 buns.
This would freeze well - for those of you that do freezer meals - you can make this ahead and freeze it!
The children loved it! SCORE!!
*organic corn - has not been genetically modified
**grass-fed beef - cows that have not been given antibiotics, hormones, and eat a diet of grass and hay as opposed to corn and soy.
***organic ketchup uses evap. cane juice instead of HFCS

The Simple Things

Rich brought home this water dispenser last week.

My life became easier because all 3 of my boys are now capable of getting water for themselves any time they need it. It may not seem like that big of a deal, but taking anything off of my very full plate is pretty huge for me!

Oh, the joys of gardening!

Look at it now!

The Perfect Cup of Coffee. . .for an admitted coffee snob

It starts with a good coffee burr mill, a french press, and a pan full of water!
Heat the water.

Grind the beans and put them in the french press.

Take the water off the heat and measure the temperature of the water. Once it gets down to 195 degrees, then pour the water in the press.

Set the timer for 3 minutes.
Put the cream in the cups.
Pour the coffee into the cups.

Then savor every last drop!

The Upstairs

Here is a tour of our upstairs. This is the view as you first walk up the stairs. This room is a bonus area . . . not really a bedroom because there is no door or closet . . . it's just an area that you walk into as you come up the stairs. We use it as the play area and Martin's bedroom. The door across the way is the bathroom.
This is the view as you come around the corner from the stairs:

This is the view from the hallway right in front of Rosalie's room - looking toward Martin's bed and the stairs. (the stairs are behind the wall and shelf on the left side of the picture. Martin can look down the stairs from his bed)
This is the view from the entrance to Aaron and Jonathan's room:

This is the view from Aaron's bed - you can see the door to their room behind their chest of drawers. The door to the attic is also in the background toward the right . . . and Jonathan's bed is behind Aaron. (who thought he should be in every shot)

And this is Aaron's bed:

The upstairs bathroom is enormous! It took me three shots just to get it all, and it still doesn't really give a good idea of how large it is.

The view from the entrance looking toward the left . . . down a passageway toward the toilet:
Looking straight ahead as you walk into the bathroom:

Hamburger Buns

I am super excited to say that all 3 of my boys now eat hamburgers/cheeseburgers. That may sound strange, however, many of you may or may not know that only months ago my middle son, Aaron, pretty much only ate bread. (very healthy homemade bread . . . but still pretty much only bread) Aaron insisted that when he turned 4 he was going to eat everything that everyone else ate. We were very patient with Aaron, as frustrating as it was. Aaron had a gag reflex that would sometimes cause food to come back up, so I didn't push the food issue too much. Once he declared that he would eat everything that the rest of us ate when he turned 4. . . we ran with it. And we held him to it. About a week after he turned 4, he looked up at us through tears and said . . .I wish I had never said that! Nevertheless, it's 6 months later now and he really does eat everything that we eat. . .and he has since he turned 4. AND . . . he likes most of it too!

Last week, we had burgers for the first time in a long time. And this was the first time that Aaron ever had one! He LOVED it!!! He actually wanted another one when he was done! I had stopped putting them on our dinner rotation because Aaron and Jonathan didn't really eat them, so it seemed to be a waste. Both Aaron and Jonathan ate their burgers, and loved them. Martin was thrilled to have burgers back in the rotation!

I don't have pictures to share of the burgers, but wanted to share pictures of the buns that I made. I used soft white and hard white grain, and they turned out so much better this time than last year when I was making them! The children were super excited to get fresh buns. They ate them with butter when they were fresh out of the oven. Later that day we ate burgers on fresh buns. . . and the next day they enjoyed turkey on the buns for lunch. I guess it's exciting for them to have bread in a different shape than just a slice!!!
